The traditional Kimoto production method, which involves a labor-intensive process of hand-mashing the rice, water, and koji to create a robust fermentation starter, contributes to its complex and layered profile. With an ABV of 14.8%, this saké offers warming notes of chestnut, applesauce, and white pepper.
